1 Egg White
2 Cups sifted powdered sugar (more as needed)
Pinch of Cream of Tarter
9 Drops of oil of peppermint (available at your pharmacy)
A couple of drops of food coloring of your choice
2 Tablespoons butter (softened)
Combine egg white, sugar, cream of tarter, peppermint oil and food coloring. Mix well. Add the butter and work the mixture with your hands until it is smooth and creamy. Shape into a roll and chill. Slice in rounds or press the peppermint mixture into small rubber candy molds and chill. Makes about 4 dozen.

This is a light airy crispy brittle, that is not hard to make. This can be made ahead of the holidays and frozen.
