The first step in meal planning is deciding on the main dish. Once you know if you are serving fish or beef, pasta or chicken, it is easy to plan the rest of the meal successfully.
Many things are considered when I am deciding on the main entree. Are we going to want something light, or will everyone be hungry and wanting a hearty option? How much time do I have to prepare the dinner. Do I want something that can be prepared quickly, or something that can be served easily? All of these things helps to determine the meal plan.
You will find recipes here that can fit any occasion and any need. Many of these dishes can be prepared ahead of time and frozen. These frozen entrees are perfect for times you don't feel like cooking, or haven't been to the grocery store. I raised three children as a single parent, and I found that freezing food kept us from being fast food junkies! If you don't have a freezer, they are worth every penny. Mother recommended that I get one that does NOT have the self defrosting feature. The food lasts longer and stays fresher. Freezing meals will simplify your life, and keep your family eating healthy meals!
It really doesn't take much more effort to double the recipe and freeze the extra... I hope you will give it a try!

This is an easy shrimp recipe that is excellent. The cream sherry, black pepper, fresh tomatoes and parsley work well together. Serve with a crisp salad and bread.
This is a perfect dish to serve for company. Make plenty, everyone will want seconds! The chicken is dipped in a butter and garlic and lemon juice mixture then rolled in bread crumbs spiced with parmesan cheese and fresh parsley. Vermouth is added and it is baked. This can be made ahead and popped in the oven 55 minutes before you are ready to eat!
Tender Veal cutlets smothered in a rich tangy mushroom gravy with vermouth and lemon juice.
Spicy hamburger and green chili in a rich tomato base, served over corn chips. Everyone then tops the mixture with their favorite fresh toppings... sharp cheddar cheese, shredded lettuce, avocados, fresh diced tomatoes, black olives, sour cream, salsa, etc. This is a hit with teenage boys with huge appetites!
This is a recipe for both a meat sauce and also meat balls for Spaghetti. We usually make the meat sauce recipe, but both the meat sauce and the meatballs are fabulous. Take your pick.
