1/4 Cup bourbon (86 proof)
2 Tablespoons dark corn syrup
1 Cup finely crushed vanilla wafers
1 Cup pecans (chopped)
2 Tablespoons unsweetened cocoa
Thoroughly stir together bourbon and corn syrup. Add vanilla wafer crumbs, pecans, 1 cup confectioners sugar and cocoa. Mix thoroughly.
Spoon portions (1/2 Tablespoons) of mixture onto wax paper generously covered with powdered sugar and roll each portion into a ball. Roll again in sugar.
Cover tightly and refrigerate. Will keep weeks. Roll again in sugar before serving.
This is a light airy crispy brittle, that is not hard to make. This can be made ahead of the holidays and frozen.
