Ingredients:
8 Chicken breasts or other pieces
1 Cup fine bread crumbs
2/3 Cup Parmesan cheese
4 Tablespoons fresh minced parsley
1 1/2 Teaspoons salt
1 1/2 Teaspoons pepper
1/2 Cup melted butter
3 or 4 Cloves or crushed garlic
4 Tablespoons fresh lemon juice
Paprika
4 Tablespoons Vermouth
Blend crumbs, cheese, parsley, salt and pepper. Then blend melted butter, garlic and lemon juice.
Dip the chicken in butter then in crumbs. Put each piece in greased casserole and drizzle the remaining butter and crumbs onto chicken, then sprinkle with paprika and add vermouth. Bake at 350 degrees for about 50 or 55 minutes. Can be served over rice.
Tip: We add at least 2 more Tablespoons of Lemon Juice, and add more Vermouth

Baked Chicken Breast in Vermouth
This is a perfect dish to serve for company. Make plenty, everyone will want seconds! The chicken is dipped in a butter and garlic and lemon juice mixture then rolled in bread crumbs spiced with parmesan cheese and fresh parsley. Vermouth is added and it is baked. This can be made ahead and popped in the oven about an hour before you are ready to eat!
