Homemade Noodles
Noodle Ingredients:
4 eggs (beaten lightly)
4 Tablespoons milk
2 Teaspoons salt
Combine the first three ingredients. Add enough sifted all purpose flour (about 4 cups) to make stiff dough. Roll very thin on a floured surface. Roll up loosely and slice 1/4 inch wide.
Unroll, and break into pieces that are about two inches long. Drop into boiling broth and cook uncovered until tender.
Tip: Mom adds 1/4 teaspoon baking powder
Ingredients:
3 Packages frozen broccoli or asparagus (10 oz.)
1/2 Cup butter
2 Hard cooked eggs (sieved)
1 1/2 Tablespoons white vinegar
1 Teaspoon lemon juice
1 Teaspoon prepared mustard
1/4 Teaspoon cayenne pepper
Cook vegetables according to package directions. Drain. Combine butter, eggs, vinegar, lemon juice, mustard, and cayenne in mixing bowl. Beat until smooth. Place broccoli or asparagus in serving plate. Top with sauce. 6 servings.
Tip: We use fresh broccoli, whenever possible.
