Ingredients:
2 Pounds hot pork sausage or 1 pound regular and 1 pound hot sausage
2 Medium onions (chopped)
1 Can (16 oz.) kidney beans
1 Can (16 oz.) whole tomatoes
1 Quart water
1 Medium bay leaf
1 Teaspoon garlic salt or to taste
1 Teaspoon leaf thyme
2 Cups peeled, diced potatoes
2 Medium green peppers, chopped
Seasoned salt and pepper to taste
Crumble sausage into heated skillet. Cook over moderate heat until done. Add onion during last 10 minutes cooking time. Drain off all grease. Add beans and their liquid, tomatoes and their liquid. Break up tomatoes with edge of spoon. Add water, bay leaf, garlic salt and thyme. Bring to boil, reduce heat and simmer, covered, one hour. Add potatoes. Bring to boil, reduce heat and simmer, covered, until potatoes are almost done. Add green pepper, seasoned salt and pepper. Simmer, covered, until potatoes are done and green pepper in tender but still slightly crisp. Eight servings.
