Ingredients:
1 Qt. chicken broth
1 1/2 Cups wild rice
1/2 to 1 Cup chopped onion
1/2 to 1 Cup chopped green pepper
1/2 Cup chopped mushrooms
1/2 Lb. Chopped bacon
10 oz. Can of mushroom soup
2 Teaspoon soy sauce
1 Teaspoon salt and pepper, each
Preheat oven to 350’F. Wash wild rice in strainer. Simmer in the chicken broth about 1 hour until liquid is absorbed. Sauté vegetables in 1/4 cup butter. (I do it in a bowl in microwave 10 minutes.) Brown bacon. Combine above ingredients with wild rice and add cream of mushroom soup, soy sauce, salt and pepper. Bake 1 hour at 350’F. in casserole of choice. Serves 10.
