Stuffed Sopapillas



Stuffed Sopapillas

Ingredients:

4 Cups enriched flour

2 Teaspoons baking powder

1 Teaspoon salt

1/4 Cup shortening

3/4 to 1 Cup warm water

Vegetable oil to fry or lard

 

This dough is like a pie crust.  Let rest 20 minutes.  (Cut in half and roll 1/8 inch thick)  Cut up the size of this card.  Roll out a little, let stand a few minutes, then fry.  Serve with honey or dust them with cinnamon and sugar. 

 

May be served as a main dish when stuffed with:

 

Brown:

Ground beef

1 Chopped onion

Add:

2/3 Cup Mexican hot sauce

1 Cup longhorn cheese

1 Big tomato chopped

 

Brown all together then stuff Sopapillas.  Place under broiler until cheese melts and garnish with tomato, lettuce and hot sauce.
