1 Qt. plus 1 cup strawberries
3/4 Cup sugar
1/2 Cups water
1 1/2 Tablespoon cornstarch
2 Tablespoon water
Pinch of salt
Red food coloring
Wash berries thoroughly and drain. Crush 1 cup of berries. Heat 1/2 cup water and sugar until dissolved. Add crushed berries and food coloring to hot mixture.
Mix cornstarch and salt with 2 tablespoons water to make a paste. Add paste to hot mixture, stirring constantly. Cook slowly till clear and very thick. It takes about 10 minutes. Cool and then lightly stir in berries to coat each. Pour into a baked pie shell.
