Ingredients:
1/2 Cup or 1 stick butter, room temperature
2 Cups Sugar
5 Eggs
1/2 Cup thawed frozen orange juice concentrate
1/3 Cup water
1 Tablespoon all purpose flour
1/2 Tablespoon yellow cornmeal
1/2 Cup shredded coconut
2 Unbaked 9” pie shells
Pre-heat oven to 350’ F. Cream butter in a large bowl using an electric mixer. Gradually add sugar and beat well. Beat in eggs one at a time. Combine orange juice and water and blend into butter mixture. Beat in flour and cornmeal. Fold in coconut. Divide mixture evenly into both pie shells. Bake until golden, about 50 to 60 minutes. Let cool before serving. Makes two 9” pies.
