No Roll Pie Crust
1 1/2 Cups sifted flour
1 1/2 Teaspoon sugar
7 Tablespoon cooking oil
3 Tablespoon milk
1 Teaspoon salt
Sift together flour, sugar and salt in 9” pie plate. Whip oil and milk with fork until well mixed. Pour milk mixture over flour and blend until flour is completely dampened. “Pastry will be very moist.” Press mixture evenly over bottom and side of pan. Bake at 425` degrees for 12 minutes and then cool.
Strawberry Filling
1 3 oz. Pkg. cream cheese
2-3 Tablespoon of milk
2 Pints fresh ,washed, drained and hulled strawberries
1 Cup sugar
3 Tablespoon cornstarch
1/3 Cup water
1 Cup heavy cream
Mix cream cheese with just enough milk to create a spreading consistency, Spread over bottom of cooled pie shell. Arrange 1 pt. strawberries on cream cheese. Mash remaining strawberries in a colander saving the saving the juice, discard pulp. Bring reserved strawberry juice to the boiling point. Gradually add sugar, stirring till dissolved. Blend cornstarch with water and add to strawberry mixture blending thoroughly. Cook slowly, stirring occasionally until thickened. Cool mixture and spread it over berries in shell. Refrigerate till thoroughly chilled. Whip cream, sweeten to taste and cover top of pie.
