Ingredients:
1 1/2 Cups sugar
3 Tablespoon cornmeal
2 Tablespoon all purpose flour
1/4 Teaspoon salt
4 Large eggs, lightly beaten
1 Teaspoon vanilla
1/4 Cups melted butter
1 3 1/2 oz. Can of flaked coconut
1 15 1/4 oz. Can of pineapple, drained
1 unbaked 9’-inch pie shell
Combine first 4 ingredients in a large bowl. Add eggs and vanilla, stirring until blended. Stir in butter, coconut and pineapple. Pour into unbaked pie shell. Bake at 350’ F. for 1 hr. or until set. Then cover with aluminum foil and for another 40 minutes remove from oven and cool on wire rack. Yield is 8 servings.
