Ingredients:
1/2 Lb. lump crabmeat, drained
1 Tablespoon lemon juice
1/4 Cup chopped green pepper
1 (2 Oz.) jar diced pimento, drained
2 Tablespoon chopped chives
2 Tablespoon grated parmesan cheese
1/4 Cup reduced calorie mayonnaise
3 Drops of hot sauce
Lemon slices, optional
Combine crabmeat and lemon juice, toss gently. Add green pepper and next 5 ingredients: stir well. Spread about 1/2 cup crabmeat mixture on bread of your choice. Bake at 350’F. for 5 minutes or until mixture is thoroughly heated. Garnish with lemon slices and serve immediately
4 Servings.
Tip: Mom suggests toasted English muffin halves, rice cakes and Holland Rusks for sandwich bread.
