Ingredients:
1 Small onion (chopped)
1 Cup sliced mushrooms
1 Tablespoons butter
1 Cup chicken broth
1/2 Cup half and half
1 1/2 Tablespoons cornstarch
1 Teaspoon dill weed
1 1/2 Cups minute instant rice brown
3/4 Cup each grated carrots and zucchini
4 flounder fillets (4 oz. each)
1/4 teaspoon each salt and paprika
Heat oven to 350 degrees. Brown onion and mushrooms in hot butter. Mix broth, half and half, cornstarch and dill, add to pan. Bring to boil. Reduce heat, cover, simmer 5 minutes. Remove from heat. Stir in carrots, and zucchini. Let stand 5 minutes. Stuff fish with mixture and sprinkle with salt and paprika. Bake fish over any remaining mixture 15 to 20 minutes. Serves four.

This is an easy shrimp recipe that is excellent. The cream sherry, black pepper, fresh tomatoes and parsley work well together. Serve with a crisp salad and bread.
