Ingredients:
4 Fresh salmon steaks (1/2 Lb. each)
flour, salt and pepper
4 Tablespoons butter
6 Mushrooms (sliced)
1//4 Cup Madeira wine
1/2 Cup cream
salt, pepper, dash cayenne pepper
Pat steaks dry. Salt, pepper and roll in flour. Sauté in butter until brown, about 5 minutes on each side. Put on warming plate in oven. In butter left in pan, add mushrooms and sauté 3 to 4 minutes. Add wine and let simmer one minute. Add 1/2 cup cream, season to taste. Add cayenne pepper. Pour sauce over steaks and serve with parsley new potatoes.

This is an easy shrimp recipe that is excellent. The cream sherry, black pepper, fresh tomatoes and parsley work well together. Serve with a crisp salad and bread.
