1/2 Cup olive oil
2 Tablespoons Cajun or Creole seasoning
2 Tablespoons fresh lemon juice
1 Tablespoon honey
1 Tablespoon soy sauce
2 Tablespoons chopped fresh parsley
Cayenne pepper (to taste)
1 lb. large shrimp (uncooked, peeled and de-veined with tails intact)
Combine first 7 ingredients in 9 x 13 baking dish. Add shrimp and toss to coat. Refrigerate 1 hour. Pre-heat oven to 450 degrees. Bake until shrimp are cooked through, stirring occasionally, about 10 minutes. Garnish with lemon wedges and serve shrimp with French bread. 4 Servings.
This is an easy shrimp recipe that is excellent. The cream sherry, black pepper, fresh tomatoes and parsley work well together. Serve with a crisp salad and bread.
