Ingredients:
4 (4 Oz.) Orange Roughy fillets
1/4 Cup Lemon Juice
1/4 Cup white wine or vermouth
1/2 Teaspoon salt
1/4 Teaspoon pepper
1/8 Teaspoon garlic powder
1 Cup chopped tomatoes
1 Cup sliced carrots
1/4 Cup sliced green onions
1/4 Cup chopped fresh parsley
Place Orange Roughy in 11x7x11/2 inch baking dish. Combine lemon juice and vermouth: pour over fish. Combine salt & pepper and garlic powder. Sprinkle about 1/2 mixture over fish, reserving remaining mixture. Combine tomato and next 3 ingredients. Spoon over fish and sprinkle with remaining salt mixture. Cover and bake at 350’F. for 25 to 30 minutes or until fish flakes easily when tested with a fork. To serve use slotted spoons. Yield: 4 servings
