3 Tablespoons butter
3 Tablespoons flour
1 Cup chicken broth
1/2 Cup cream
3 Tablespoons White Dry Wine or Vermouth
2 Teaspoons lemon juice
1/2 Lb. sautéed mushrooms
1 Green pepper (chopped and sautéed)
1 Small onion (chopped and sautéed)
1/2 Teaspoon salt
1/8 Teaspoon paprika and pepper
1/2 Cup parmesan cheese (finely grated)
1 1/2 Cups crab meat and shrimp (sautéed)
Melt butter in skillet, blend in flour. Add broth and cream, vermouth and lemon juice. Stir until sauce thickens, add mushrooms, green pepper and onions. Add salt, pepper and paprika, seafood and cheese. Stir. Stuff baked shells with Seafood Newburg.
Tip: Mom buys frozen pastry shells and bakes according to package directions. These shells rise when baked and are very flaky and good. She sometimes use lobster and shrimp.
This is an easy shrimp recipe that is excellent. The cream sherry, black pepper, fresh tomatoes and parsley work well together. Serve with a crisp salad and bread.
