1 Lb. fresh crabmeat, drained & flaked
2/3 Cup mayonnaise or salad dressing
1 Tablespoon chopped fresh parsley
2 Teaspoon lemon juice
3 to 4 tablespoon grated parmesan cheese
Combine first 4 ingredients. Spoon about 1/2 cup mixture into 4 shell shaped baking dishes. Sprinkle with cheese. Bake at 350’ F. for 15 minutes, or until thoroughly heated. Sprinkle with paprika. Yield is 4 servings.
Mom says this dish may be baked in four 3 inch pastry shells if you do not have the shell shaped dishes. This dish has a mild flavor, emphasizing the crabmeat. If wanting a spicier dish she adds old bay seasoning to taste. She also says this makes a nice first course.
