Ingredients:
1 Stick butter
1 Cup flour
1 Cup sugar
1 Teaspoon salt
3 Teaspoons double acting baking powder
1 Cup milk
3 Cups sliced fresh peaches
Heat over to 375 degrees. Put butter in shallow baking pan 91/2 x 6 1/2. Place in oven until butter is melted. Meanwhile, sift together flour, sugar, salt, and baking powder into bowl. Add milk all at once. Stir just long enough to blend. Pour half of batter over melted butter. Arrange peaches on top of batter. Add remaining batter, spreading evenly over peaches. Bake at 375 degrees for about 45 minutes or until topping is lightly brown.
Serves 8.
For Larger Pans... a no salt version:
Ingredients:
1 1/2 stick butter
1 1/2 cups flour
1 1/2 cups sugar
4 1/2 teaspoons baking powder
1 1/2 cups milk
5 cups sliced fresh peaches
Prepare same as above, bake in large rectangle pan.
