2 Cups half and half
6 large eggs
1 Cup sugar
1 Cup canned solid pack pumpkin
1 Tablespoon vanilla extract
2 Teaspoons ground cinnamon
1 Teaspoon ground nutmeg
7 1/2 Cups 3/4 “ pieces purchased bran muffins, about 10 muffins
1 Cup toasted pecans
Vanilla ice cream
Pre-heat oven to 350 degrees. Butter 9x13x2” glass baking dish. Whisk first 7 ingredients in large bowl. Add muffins and pecans and stir to combine. Pour mixture into prepared dish. Bake until tester inserted into center comes out clean. About 45 minutes. Cool slightly. Spoon pudding into bowls. Top with ice cream. Dribble with honey and serve. Serves 10.
