3 Pints strawberries (hulled)
1/4 Cups sugar
3 Tablespoons orange juice concentrate (thawed)
2 Tablespoons dark rum
Whipped Cream topping:
1 Cup whipping cream (chilled)
3 Tablespoons sour cream
2 Tablespoons sugar
2 Teaspoons dark rum
Slice strawberries in mixing bowl. Combine sugar, concentrate and rum and blend well. Pour over berries and mix gently. Cover tightly and macerate for 1/2 to 2 hours in refrigerator.
Pour whipping cream in chilled bowl and beat until thick. Add sour cream, sugar and rum. Beat until mixture holds shape. Cover and chill until ready to use. Spoon berries into chilled goblets and pass topping or serve with sauce added.
