Ingredients:
1 Cup un-sifted flour
1/2 Cup butter
1 Cup parmesan cheese
1/4 Teaspoon salt
Dash of pepper and cayenne
1 Egg (slightly beaten)
In medium bowl combine flour and butter, then blend like for pastry. Stir in cheese, salt, pepper and cayenne. Sprinkle with 2 or 3 tablespoons water and toss with fork. Form into ball with hands then flatten slightly. Roll out and cut into pieces. May be frozen or at least chill to keep from shrinking. Preheat oven to 400 degrees. Place 1 inch apart on un-greased sheets. Brush tops lightly with egg and sprinkle with paprika. Bake 10 minutes or until brown. Makes 2-3 dozen.
Tip: Mom uses a Texas cookie cutter to shape. May freeze before baking, then pop in oven as needed.
