Ingredients:
13/4 Cups flour
1 1/4 Cups 3 minute brand oats
1 1/2 Teaspoon baking powder
1 Teaspoon salt
1/2 Teaspoon soda
3 Eggs
3/4 Cup granulated sugar
1/3 Cup vegetable oil
1 Teaspoon vanilla
1 1/2 Cups mashed bananas (3 med)
3 Tablespoon milk
1/2 Cup chopped nuts
In a large bowl stir together flour, oats, baking powder, soda and salt, set aside. In a small bowl beat eggs. Add sugar, oil and vanilla: mix well. In small bowl combine bananas and milk. Add banana mixture with egg mixture alternately with dry ingredients. Stir in walnuts. Turn batter into a greased 9x5x3” loaf pan. Bake 350’F. for 55 to 60 minutes. Cool in pan 10 minutes. Remove, wrap and store in refrigerator for easier slicing. Makes 1 long or 2 small loafs.
