Ingredients:
3/4 Cup butter, softened
2 Cups sugar
4 Eggs
2 Tablespoon molasses
2/3 Cups orange juice
2 Cups mashed pumpkin
3 1/3 Cups all purpose flour
1 Teaspoon baking powder
1 Teaspoon baking soda
1 1/4 Teaspoon salt
1 Teaspoon ground cinnamon
1 Teaspoon ground cloves
1 1/2 Teaspoon vanilla
1 Cup raisins
1 Cup pecans
Beat butter at med. speed of an electric mixer. Gradually add sugar, beating well. Add eggs, one at a time, beating after each addition. Add molasses, orange juice and mashed pumpkin. Combine flour and next 5 ingredients. Add to creamed mixture, mixing just until blended. Stir in vanilla, raisins and nuts. Spoon batter into four greased and floured 7x3 1/2x2 “ loaf pans. Bake at 350’ F. for 50-55 minutes or until a tester comes out of center clean. Cool in pan 10 minutes, then remove from pans and let cool completely on wire rack. Yield 4-7 loaves
Tip: Mom sometimes leaves out the raisins and nuts but it is very good with them also!
