Ingredients:
1 Cup whole wheat flour, sifted
1 Cup 6 grain cereal, (whole grain, ground)
1 Teaspoon salt
1 Teaspoon soda
1/2 Teaspoon baking powder
1/2 Teaspoon cinnamon
1/4 Cup butter
3/4 Cup brown sugar, packed
1 Egg
1 Cup buttermilk
2/3 Cups chopped walnuts
1 Pkg. (12 oz.) pitted prune
Stir together whole wheat and cereal, soda, salt baking powder and cinnamon until thoroughly blended: set aside. In a separate bowl, beat together butter and brown sugar until creamy, then beat in egg. Alternately add flour mixture and buttermilk to creamed mixture. With last addition of flour mixture add prunes and nuts, stirring until blended. Spoon into well greased 9x5 loaf pan. Bake 350’F. for 1 hour and 10 minutes. or until bread begins to pull away from pan. Let cool in pans 10 minutes. Turn out onto rack to cool. Wrap & store in refrigerator for 1 day before slicing. Makes 1 long loaf or 2 small loafs.
Tip: Mom adds Watkins vanilla!
