1 16 oz. package cranberries
2 Cups sugar
1 Cup orange juice
1 Cup golden or dark seedless raisins
1 Cup California walnuts (chopped)
1 Cup chopped celery
1 Medium apple chopped
1 Tablespoon grated orange peel
1 Teaspoon ground ginger
In 3 quart saucepan heat cranberries, sugar, and 1 cup water to boiling stirring frequently. Reduce to low and cook 15 minutes. Remove from heat, stir in remaining ingredients. Cover and refrigerate.
This is a frozen salad, that can be made ahead for a holiday meal. It is a tart cranberry sauce topped with a fresh whipped cream topping. It is spooned into a muffin tin lined with cup cake papers, and served in individual servings. It is a family favorite!
