Ingredients:
1 Cup cold cooked rice
3/4 Lb. tiny frozen shrimp
1/2 Teaspoons salt
1 Tablespoon lemon juice
1/4 Cup chopped green peppers
1 Tablespoon minced green onion
2 Tablespoons French dressing
1 Tablespoon chopped green olives (stuffed)
3/4 Cup diced raw cauliflower
Pepper to taste
1/3 Cups Miracle Whip
Combine all ingredients. Chill for several hours before serving. Serve on a bed of lettuce with fresh melon slices.

This is a frozen salad, that can be made ahead for a holiday meal. It is a tart cranberry sauce topped with a fresh whipped cream topping. It is spooned into a muffin tin lined with cup cake papers, and served in individual servings. It is a family favorite!
