1/2 Cup mayonnaise
2 Tablespoon sugar
2 Tablespoon vinegar
4 Cups coarsely chopped cabbage
1 Cup salted Spanish peanuts, chopped
Cabbage leaves, optional
Combine mayonnaise, sugar and vinegar: mix well. Chill 2 hours. Combine cabbage and peanuts: add dressing mixture and toss gently. Serve on cabbage leaves, if desired. Yield 6 servings.
This is a frozen salad, that can be made ahead for a holiday meal. It is a tart cranberry sauce topped with a fresh whipped cream topping. It is spooned into a muffin tin lined with cup cake papers, and served in individual servings. It is a family favorite!
