4 Large tomatoes. sliced
1/4 Cup plus 2 Tablespoon chopped fresh basil
1/4 Cup plus 2 Tablespoon olive oil
2 Tablespoon vinegar
1/2 Teaspoon salt
1/8 Teaspoon pepper
Place tomatoes in a shallow bowl; sprinkle with basil. Combine olive oil, vinegar, salt & pepper in a jar: Cover tightly and shake vigorously. Pour over tomatoes. Chill 3 hours. Yield is 8 servings.
Tip: Mom sprinkles finely chopped garlic buds on tomatoes or garlic powder on tomatoes
