2 Pkgs. of lemon Jell-O
2 Cups hot water
2 Cups fresh cream, whipped
1-3 Oz. pkg. of cream cheese, softened,
1 Tablespoon half and half
1 Cup celery, chopped
1 Cup chopped green olives
Mix Jell-O and hot water until Jell-O is dissolved. Cool until it starts to gel. Whip two cups cream until thick. In separate bowl combine cream cheese and half and half. Fold into cream cheese mixture: celery, olives, and whipped cream. Stir into Jell-0 and set in refrigerator.
2/3 cup Miracle Whip
1 Small jar pimento, chopped
2 Cans cocktail size shrimp or broken shrimp
2 Tablespoon lemon juice
1 Tablespoon minced onion
Red food coloring (optional)
May need to thin with milk or cream when ready to serve. Spoon Shrimp sauce over Jell-O and enjoy!
Tip: We prefer using fresh shrimp rather than canned.
This is a frozen salad, that can be made ahead for a holiday meal. It is a tart cranberry sauce topped with a fresh whipped cream topping. It is spooned into a muffin tin lined with cup cake papers, and served in individual servings. It is a family favorite!
