1 Can (6 Oz.) frozen orange juice thawed and undiluted
1 Stick butter or margarine (softened and cut in small pieces)
1 Package (12 oz. vanilla wafers finely crushed)
1 Lb. powdered sugar
Combine orange juice, butter, wafer crumbs and powdered sugar. Using hands, mix thoroughly until butter is easily distributed. Roll dough into walnut size balls. Dough should be sticky for coconut to stick. Roll cookies in coconut. Refrigerate cookies until firm. Makes 4 dozen.
May be stored for a long time in refrigerator and also freezes nicely.
These are self trimming cookies that are moist and chewy. We make dozens and freeze them before the holidays. They can then be taken out of the freezer as needed. Fresh homemade cookies are minutes away! This recipe came from a high school classmate, Sherry!
