Ingredients:
2 1/4 Cups flour
1/2 Cup Confectioners sugar
1 Cup oleo
4 Eggs (beaten)
2 Cups granulated sugar
1/3 Cup lemon juice
1/2 Teaspoon baking powder
Preheat oven to 350 degrees. Mix together 2 Cups flour, sugar and oleo. Knead and pat into 9x13 pan. Bake 20 to 25 minutes. Combine eggs, granulated sugar, and lemon juice. Beat with mixture. Spoon in 1/4 cup flour and baking powder. Pour into hot pastry shell and bake 25 minutes at 350 degrees. When cool, sprinkle with confectioners sugar and cut into small bars. Makes 4 dozen.
Tip: Mom adds 1 teaspoon lemon zest to crust and also add more lemon juice!
