Ingredients:
1 Teaspoon Coffee Granules
1 Teaspoon hot water
3 Egg whites
1/2 Teaspoon vanilla
3 Cups sifted powdered sugar
2/3 Cups cocoa
2 Tablespoons flour
2 Cups pecans (I use only 1 cup of nuts)
Dissolve granules in hot water in a mixing bowl. Stir in egg whites and vanilla. Combine powdered sugar and next two ingredients in another bowl. Add egg white mixture and beat at medium speed with electric mixer until blended. Stir in nuts. Drop by rounded spoonfuls 1 inch apart onto greased and floured cookie sheets. Bake at 350 degrees for 12 to 15 minutes. Remove to cool. (Take off pans immediately) Yield 4 dozen.

These are self trimming cookies that are moist and chewy. We make dozens and freeze them before the holidays. They can then be taken out of the freezer as needed. Fresh homemade cookies are minutes away! This recipe came from a high school classmate, Sherry!
