Ingredients:

2 Cups all purpose flour

1 1/2 Cups natural bran

1 1/2 Teaspoon baking soda

1/2 Teaspoon salt

2 Cups plain yogurt

3/4 Cup raisins

1/2 Cup oil

1/2 Cup dark molasses

 

Preheat oven to 425 degrees.  Generously grease muffin tins.   

Thoroughly combine dry ingredients in large mixing bowl.  Make well in center and add remaining ingredients, blending just until moist.  Do not over-mix. 

Divide among tins.  Bake until muffins are done, about 20-25 minutes.

Tip:  Mom adds 1/4 cup more molasses and 1/4 cup more raisins.

Good Morning Pumpkin Pancakes

Excellent any time of the year, but especially good during the fall and winter.  The pumpkin flavor is rich and hearty.  These are best served with our homemade "Dutch Honey" recipe.  This is a rich thick syrup that will last for weeks in the refrigerator.  The "Dutch Honey" is also good on ice cream!
