Ingredients:
1 Can Cream of mushroom soup
6 hard boiled eggs-largely chopped
1/2 Cup milk - less 1 Tbsp.
1/2 Cup Miracle Whip
1/2 Cup chopped scallions or to taste
Chopped pimentos to taste
1 Tsp. Accent food seasoning
Salt & Pepper to taste
1/4 to 1/2 Cup bacon bits or crumbled bacon
1 Package English muffins with butter & broiled face side up
Mix all ingredients, except eggs. Grease casserole dish and layer the liquid with chopped eggs. Bake at 350 degrees for 30 minutes, or until bubbling. Serve over muffins. Serves 4
Can prepare ahead of time and kept in refrigerator. Good for a lunch or brunch. Serve with fruit and champagne.
