Ingredients:
4 Pounds sweet potatoes (10 to 12 medium potatoes)
1/2 Cup butter
1/4 Cup packed brown sugar
Place potatoes in enough salted water (1/2 teaspoon salt to 1 Cup water) to cover. Heat to boiling. Cook until tender, 30 minutes. Drain. Slip off skin-cut potatoes into 1/2 inch slices and set aside.
Melt butter in heavy 10 inch skillet. Stir in 2 tablespoons brown sugar. Cook over low heat stirring constantly, 1 minute. Add sweet potato slices. Sprinkle sweet potato slices with remaining 2 tablespoons brown sugar. Cook over low heat. Turning occasionally until hot- about 10 minutes.
