Ingredients:
4 Large sweet potatoes (3 Lbs. or more)
8 Tablespoon butter
8 Tablespoon brown sugar
8 Tablespoon flaked coconut
8 Tablespoon maple syrup
8 Tablespoon slivered almonds, toasted
Peel potatoes, cut into 1/3 inch slices and arrange in large skillet: cover with water, and bring to a boil. Cover, reduce heat, and simmer 10 minutes or until tender. Drain potatoes, remove from skillet and set aside. Melt butter in skillet and stir in brown sugar, coconut and syrup. Return potatoes to the skillet, cook until thoroughly heated. Turn the potatoes to coat with mixture. Arrange potatoes in serving dish sprinkle with almonds. Yield 8 servings.
