Ingredients:
1/2 Cup vegetable oil
4 Large garlic cloves, pressed
3 Tablespoons fresh lime juice
2 Teaspoons Tabasco sauce
1 Teaspoons chopped fresh thyme or 1/4 Teaspoon dried
2 Large russet potatoes each cut in 8 wedges
Whisk first 5 ingredients in small bowl to blend. Season with salt. Arrange potatoes in 13x9x2 glass baking dish. Season with salt. Set aside 1/4 cup of dressing, pour remainder over potatoes and toss to coat. Let stand 30 minutes. Preheat oven to 400’F. Roast potatoes until crisp and brown turning occasionally, about 1 hour. Drizzle reserved 1/4 cup dressing over potatoes. Nice & spicy with roast chicken or lamb.
