Ingredients:
8 Medium sweet potatoes
1 Cup brown sugar
2 Tablespoons cornstarch
1/2 Teaspoon salt
1/2 Teaspoon shredded orange peel
2 Cups orange juice
1/2 Cup raisins
6 Tablespoons butter
1/3 Cup sherry
1/4 Cup walnuts
Cook sweet potatoes in boiling salted water until just tender; drain. Peel and cut lengthwise into 1/2 inch slices. Arrange in 13 x 9 x 2 inch baking dish. Sprinkle with a little salt. In saucepan combine brown sugar, cornstarch and the 1/2 teaspoon salt. Blend in orange peel and juice. Add raisins. Cook and stir over medium heat till thickened and bubbly. Cook 1 minute longer. Add butter, sherry and walnuts, stirring until butter is melted. Pour over potatoes. Bake 325 degrees until potatoes are well glazed (about 30 minutes). Baste occasionally with orange juice mixture. Serves 8.
