Ingredients:
6 Hard-cooked eggs
1/4 Cup mayonnaise
Salt
Tabasco sauce
1/4 Teaspoon paprika
1 Teaspoon prepared mustard
2 Pounds fresh asparagus or 2 packages (10 oz.) frozen
2 Tablespoons butter or margarine
2 Tablespoons flour
1 1/4 Cups milk
1 Cup shredded cheddar cheese
Heat oven to 375 degrees. Peel eggs and cut in half. Remove yolks; sieve and mix with mayonnaise, 1/2 teaspoon salt, 1/8 teaspoon Tabasco, paprika and mustard.. Refill whites with yolk mixture. Cook asparagus in boiling salted water just until crisp-tender. Drain and place in a buttered shallow baking dish. Make cheese sauce by melting butter and blending flour and 1/2 teaspoon salt; gradually add mild and cook stirring constantly, until mixture thickens and comes to a boil. Add 1/4 teaspoon Tabasco sauce and cheese; stir until cheese melts. Top asparagus with deviled egg halves and spoon sauce over all. Bake 10 minutes. Makes 6 servings.
